Yes you keep all your ability points and abilities unlocked. All quests should be available to complete again in NG+, including the side quests. Finda camp you know in and out. The enemy spawns, their movement patterns and where they sleep. Then at night, place oil jars around their beds and light them up. Make sure to make a save right before you do this, so that when you die you dont need the long setup again. You cannot make manual saves in Origins.
Totame an animal, you need to unlock two different skills in the Seer skill branch. You first need to unlock "Sleep Darts" and then "Animal Taming". After this, equip the sleep darts from your gear menu, and then go find some lions. These don't often appear too often just randomly in the wild, so it is easiest to find a lion lair.
